This is a great vegetarian dinner and incredibly filling with tons of flavor! I've tried a handful of similar recipes at home and in restaurants but this one is by far one of the most flavorful stuffed bell peppers I've ever had.

Instructions
  1. Preheat oven to 350 degrees fahrenheit.
  2. Place empty bell peppers standing upright in baking dish.
  3. Mix all other ingredients together in a large bowl including 1/2 cup of the marinara sauce. (optional step - add a small amount of grated parmesan cheese to the mixture for added flavor.)
  4. Spoon the mixed filling into each bell pepper, allowing any extra filling to spill over into the dish.
  5. Top with spoonfuls of remaining tomato or marinara sauce. (Optional step, add grated cheese.)
  6. Bake for 35-45 minutes. Until tops begin to brown.
  7. ENJOY!
Recipe Notes

Start with 1 cup green lentils (COOKED) … 1 cup lentils with 3cups boiling water for 15-20 minutes in a medium saucepan on the stove. I add a splash of olive oil, a pinch of salt, a sprinkle of garlic powder, oregano and turmeric to mine. & if I have fresh herbs available I love to add fresh oregano, marjoram &/or thyme…. this is completely optional and not required as all of the added ingredients in this dish alone will give the lentils a ton of added flavor!

I served my Stuffed Bell Peppers with steamed broccoli and a baked sweet potato for a rounded out meal.

These peppers make great leftovers too - just re-warm in a glass dish at 350 degrees for 10 minutes.
