Start with 1 cup green lentils (COOKED) … 1 cup lentils with 3cups boiling water for 15-20 minutes in a medium saucepan on the stove. I add a splash of olive oil, a pinch of salt, a sprinkle of garlic powder, oregano and turmeric to mine. & if I have fresh herbs available I love to add fresh oregano, marjoram &/or thyme…. this is completely optional and not required as all of the added ingredients in this dish alone will give the lentils a ton of added flavor!
I served my Stuffed Bell Peppers with steamed broccoli and a baked sweet potato for a rounded out meal.
These peppers make great leftovers too - just re-warm in a glass dish at 350 degrees for 10 minutes.
