Rosemary Roasted Butternut Squash
From roasted side dishes to soups, to pastas, to salads, butternut squash is so versatile, sweet & nutty and so good for you too. One of my favorite ways to utilize this winter vegetable is in combination with a sweet and savory roasted vegetable side dish. It's a great family favorite for the Holidays too!

Rosemary Roasted Butternut Squash Recipe
Instructions
  1. Preheat oven to 400 degrees.
  2. Place all prepared ingredients into a large roasting pan, mixing everything around with your hands to make sure the olive oil and spices are easily dispersed.
  3. Place into oven for 20 minutes
  4. Remove, stir to mix (add pecans or walnuts if desired) and After 20 minutes have passed, remove from oven, stir with a wooden spoon and place back into oven for an additional 10 minutes or until evenly roasted.
  5. Let Cool for 5-10 minutes before serving.
  6. ENJOY!
Recipe Notes

As an added flavorful bonus I sometimes throw a handful of pecan halves on top for the last 10 minutes when you place the dish back into the oven to bring out the toasted flavor and aroma of the Pecans. Plus, this adds a great nutritional addition to the mix. Try it either way!

This dish makes a great side dish for any holiday gathering with family and friends and is easily reheated in the oven!
