‘Tis the season for pumpkin pie protein bites. that’s how the saying goes right!?
& a whole lot of other delicious treats. Some healthier than others.
So, If I told you I created something that tastes as good as pumpkin pie – without the crust – full of only clean, healthy ingredients & boosted with protein …. would you believe me? … I’m calling this amazing little treat of mine … Pumpkin Pie Protein Bites & I expect I’ll be making them again and again because they were truly so simple … & seriously that good. I was recently gifted a canister of the NEW Gingerbread Coffee Creamer by Vital Proteins to help them launch their new product line. You should know – I’ve been a loyal customer of theirs for years & truly believe adding collagen to my diet daily for the past year has drastically improved my skin and my digestion. (I’ll write more about this topic soon.) This product is different though. It’s a mix of collagen with dehydrated coconut milk (to make it creamy) and organic spices to take the flavor profile up a notch.
More Importantly though, I loved the taste of this new creamer and the blend of the organic spices (cinnamon, ginger, nutmeg & vanilla) were the perfect addition to my coffee. But, I wanted to get a little more creative than that.
So, inspired by the flavors in this gingerbread blend ….
I began mixing it with pumpkin and just played with a few additional ingredients until the mixture came out perfectly.
The result was better than I had imagined & I hope you enjoy this recipe as much as I do.
Pumpkin Pie has always been one of my favorite holiday treats … I even posted a recipe for it last year, you can check it out here. But, since then … I’ve uncovered that I have a true gluten allergy so the traditional pie is out of the question for me. Which is why I think I’m so excited by these little pumpkin pie protein bites.
Infused with all the goodness of healthy fats from coconut butter, fiber from chia seeds, protein from the collagen creamer and almond flour. As well as a little sweetness from the drizzle of pure maple syrup. (coconut sugar optional for the coating and highly recommended… a little bit truly goes a long way.)
This combination of flavors is the perfect seasonal treat you’ve been waiting for.
