So, If I told you I created something that tastes as good as pumpkin pie – without the crust – full of only clean, healthy ingredients & boosted with protein …. would you believe me? … I’m calling this amazing little treat of mine … Pumpkin Pie Protein Bites & I expect I’ll be making them again and again because they were truly so simple … & seriously that good. I was recently gifted a canister of the NEW Gingerbread Coffee Creamer by Vital Proteins to help them launch their new product line. You should know – I’ve been a loyal customer of theirs for years & truly believe adding collagen to my diet daily for the past year has drastically improved my skin and my digestion. (I’ll write more about this topic soon.) This product is different though. It’s a mix of collagen with dehydrated coconut milk (to make it creamy) and organic spices to take the flavor profile up a notch.

More Importantly though, I loved the taste of this new creamer and the blend of the organic spices (cinnamon, ginger, nutmeg & vanilla) were the perfect addition to my coffee. But, I wanted to get a little more creative than that.

So, inspired by the flavors in this gingerbread blend ….

I began mixing it with pumpkin and just played with a few additional ingredients until the mixture came out perfectly.

The result was better than I had imagined & I hope you enjoy this recipe as much as I do.

Pumpkin Pie has always been one of my favorite holiday treats … I even posted a recipe for it last year, you can check it out here. But, since then … I’ve uncovered that I have a true gluten allergy so the traditional pie is out of the question for me. Which is why I think I’m so excited by these little pumpkin pie protein bites.

Infused with all the goodness of healthy fats from coconut butter, fiber from chia seeds, protein from the collagen creamer and almond flour. As well as a little sweetness from the drizzle of pure maple syrup. (coconut sugar optional for the coating and highly recommended… a little bit truly goes a long way.)

This combination of flavors is the perfect seasonal treat you’ve been waiting for.

Pumpkin Pie Protein Bites
Seasonal pumpkin treats are a must this time of year & these will quickly become a staple in your routine in these upcoming months once you discover how easy these are to make and keep on hand. NO COOKING REQUIRED. All you need is to mix and then freeze for one hour - storing the pumpkin pie protein bites in your fridge for up to one week. 6 ingredients. Clean Pure. Simple. & GlutenFree. *If you prefer to use a different flour besides almond flour - feel free to substitute the flour for any flour of your choice! (almond flour, tigernut flour, oat flour, etc.)

Pumpkin Pie Protein Bites - Gluten Free and only 6 ingredients ready in under 15 minutes.
Instructions
  1. Gather all ingredients and supplies - can opener, large mixing bowl, small mixing bowl, fork, measuring cups, measuring spoons and large glass storage container (7x9in pyrex glass dish pictured above).
  2. *You can use whole chia seeds if you prefer but I used a nutri bullet blender to quickly "grind" chia seeds into a powder before adding to the mix. This allows the seeds to bind the mixture quicker and absorb the liquid more evenly.
  3. In a large mixing bowl - combine canned pumpkin and all other ingredients except for cinnamon, almond flour and optional ingredients (maple syrup and coconut sugar)
  4. Mix together with fork until evenly blended
  5. Add 3 tbsp of almond flour and 1 tsp cinnamon to mixing bowl. (reserve remaining 2 tbsp almond flour and 1 tsp cinnamon for small mixing bowl)
  6. Add 2 tsp pure maple syrup to mix if desired for sweetness. Mix until evenly combined.
  7. In a small mixing bowl - evenly combine 2 tbsp flour, 1 tsp cinnamon, 1 tsp coconut sugar. (added sugar optional for sweetness.)
  8. Begin to roll the pumpkin pie mixture in your hand forming a small ball just slightly smaller than a donut hole.
  9. Lightly roll ball into dry flour/cinnamon/sugar mixture until evenly coated.
  10. Place into glass tray and complete previous two steps until all 15 balls are complete.
  11. Place sealed glass container into freezer for one hour & then serve or transfer to refrigerator.
  12. Eat. Repeat. & Don't forget to share.
