My Favorite Homemade Soup Recipe


Homemade soup is so easy to make and is such an easy go-to dinner idea even when you feel like you have nothing left in the kitchen to make a meal out of.

The ingredients in this dish are just so simple & if you keep your kitchen stocked with the necessary basics then you should always have what you need.

Plus, I love knowing that I’m getting something nutritious out of it when I chop up fresh veggies and throw them all together in a large pot on the stove. I have a handful of Chuck Bednarik Jerseys favorite recipe’s that I’ve experimented with over the years and always put my own spin on it to make my own depending on what I have in the kitchen, but this is probably the one that I make the most often. homemade soup is our household favorite. P.S. The key to making this dish quickly is to prepare each ingredient as you go and add it to the pot in the order listed below so that each item is able to cook appropriately and release its flavor into the soup! If you have all the ingredients on hand, you can prepare this soup in 20 minutes or less!

Here’s a couple ingredients you might not be familiar with: 

2 leeks (sliced into small rounds, discard the tough dark green tops)

1 small package (2 cups) frozen cheese tortellini.

Instructions
  1. Start by adding the leeks and garlic to your large pot on the stove with 6 tbsp olive oil, salt pepper, thyme, oregano and basil over medium heat, stirring often to avoid any burned areas.
  2. While the leeks and garlic are beginning to soften, slice your carrots into thin small rounds and add to the pot.
  3. Cut the zucchini into thicker rounds than the carrots as the zucchini softens up much more in the soup and can become mushy if cut too thin. slice into half moons and add the zucchini to the pot followed by 1 cup of water or vegetable broth.
  4. Chop and add the tomatoes.
  5. Continue to stir often. Add the garbanzo beans and tomato paste.
  6. Pour in the remaining 4 cups water/vegetable broth, place the lid on the pot and bring to a boil.
  7. Lower the heat once the soup begins to boil and allow to simmer for at least 5 minutes more.
  8. The longer the soup sits, the more flavorful it will become.
  9. When ready to serve, add the frozen tortellini to the simmering soup for 3 minutes and then turn off the flame.
  10. ENJOY!
Recipe Notes

The frozen tortellini will be the last thing you will add to the soup before serving, as most frozen tortellini or ravioli only need to be cooked for approximately 2-3 minutes.

If you choose to use any other type of noodle, ex/macaroni shells, etc… Cook according to package and then add to the soup once cooked.
