Coconut Chia Seed Pudding Recipe Ideas
Fast food should always look like this. Simple. Nutritious. Satiating & Delicious. This recipe will quickly become one of your favorites once you gather the basic ingredients and keep them in the house!

  1. In a small (16oz) mason jar – add coconut milk
  2. add chia seeds – stir immediately for 10 seconds until well combined
  3. (THIS IS THE MOST IMPORTANT STEP) – let sit for one minute & then stir again for another 10 seconds.
  4. put the lid on the mason jar and let sit for 15 minutes to allow the chia seeds to absorb the liquid and form a ‘gel’ like consistency. *or refrigerate overnight and it will be ready to grab in the morning!
Recipe Notes

This recipe makes two servings – that way you don’t have to make it every day & you have some ready for the next day.

If the pudding is TOO THICK – add a few spoonfuls of water until desired consistency is reached.

If the pudding is TOO THIN – add another tbsp of chia seeds.


*Optional toppings include: fresh berries (raspberries, blueberries, strawberries), bananas, chopped nuts (pecans or walnuts), nut butter (almond butter or pecan butter are my favorite), dried berries (goji berries or mulberries), or even cacao nibs (they’re like chocolate chips without all of the other junk 🙂
