With this post, You get 3 recipes in one!
If I’m going to be honest here, I love my veggies and am obsessed with a great homemade salad, but arugula has just never been one of my favorite ingredients. However, I recently discovered that ‘baby’ arugula is a whole lot different in flavor than its ‘wild’ adult-arugula counterpart . The flavor profile of the baby leaf is almost sweet, making it much less bitter and so much more flavorful than its mistakingly close relative ‘wild or adult’ arugula.
& I have learned to love it. Here’s a great salad to try it in:

& Here’s what it takes to make a delicious baby arugula salad:
1st step – Homemade Croutons
2nd step – Salad Dressing
– once again, so delicious and no unneccessary additives included. You’ll never want to use store-bought salad dressing ever again.
3rd step – Salad
– Mix all ingredients (as much as you’d like of each) together in a large bowl
– Baby Arugula
– sliced avocado
– sliced cherry tomatoes
– juice squeezed from half of a lemon
– roasted sunflower seeds
(If you can’t find roasted seeds you can always make your own. In a small pan, roast regular sunflower seeds on medium heat for 3 minutes. Stirring frequently, remove from flame when seeds begin to brown)
– add in your homemade croutons!
& as much of your homemade salad dressing as you desire!
