The Best Baby Arugula Salad

I have created the’BEST’ Baby Arugula Salad with fresh homemade Croutons and a zesty-sweet vinaigrette salad dressing

If I’m going to be honest here, I love my veggies and am obsessed with a great homemade salad, but arugula has just never been one of my favorite ingredients. However, I recently discovered that ‘baby’ arugula is a whole lot different in flavor than its ‘wild’ adult-arugula counterpart . The flavor profile of the baby leaf is almost sweet, making it much less bitter and so much more flavorful than its mistakingly close relative ‘wild or adult’ arugula.

 & I have learned to love it. Here’s a great salad to try it in:

Baby Arugula

This salad is so delicious and nutritious and I think you’ll love it just as much as I do.

Here’s what you’ll need:

French Baguette, Baby Arugula, 1 Lemon, 1 Avocado, Handful of Cherry Tomatoes, Sunflower Seeds, Olive Oil, White Wine Vinegar, Honey, Dijon Mustard, Salt, Pepper, Garlic, Oregano

Instructions
  1. Preheat oven to 400 degrees fahrenheit.
  2. Toss torn pieces of bread in a large pan & top with seasonings and olive oil.
  3. Mix bread pieces with you bare hands in order to disperse the olive oil and spices evenly.
  4. Place in oven for 3 minutes.
  5. Remove, stir/toss around with a spatula and bake for 3 minutes more.
  6. ENJOY on top of your favorite salad!
Recipe Notes

Croutons store well in the refrigerator in an airtight container for up to 2 weeks.

Instructions
  1. Add all ingredients to a small blender and blend for 10-15 seconds until mixed.
  2. Add to your favorite salad & ENJOY!
Recipe Notes

Not sure what blender to use? I use the nutri-bullet. But anything will work.

Too creamy or too savory for your taste? Just add a few tablespoons of water.

Adjust serving size and make more to store for later use, keeps well in a refrigerated air-tight glass container for up to 1 week.

3rd step – Salad

– Mix all ingredients (as much as you’d like of each) together in a large bowl

– Baby Arugula

– sliced avocado

– sliced cherry tomatoes

– juice squeezed from half of a lemon

– roasted sunflower seeds

(If you can’t find roasted seeds you can always make your own. In a small pan, roast regular sunflower seeds on medium heat for 3 minutes. Stirring frequently, remove from flame when seeds begin to brown)

add in your homemade croutons!

& as much of your homemade salad dressing as you desire!
